Shahji Ghee

- Wash and dry the mint leaves. Roast half of them on a hot tawa.
- Crush to a powder. Set aside. Chop the remaining mint leaves.
- Take chapati atta, salt in a bowl. Mix well using your fingertips.
- Add chopped mint leaves and knead till you get soft and smooth dough using      water.
- Cover it and let it rest for 15-20 minutes.
- Divide it into 8 equal portions, make smooth balls.
- Roll out each ball into a medium sized chapati.
- Apply Shahji Ghee over the rolled chapati and sprinkle with some flour.
- Now start pleating the folds like a fan and twist it back into the form of a ball. Set aside for five minutes.
- Roll out each portion into 6 inch diameter circle paratha.
- Cook the paratha using a Shahji Ghee
- Serve the Pudina Paratha
