100% Ayurvedic Bilona Method

We make our A2 ghee by hand-churning it according to a 3000-year-old Vedic tradition known as the Bilona Method. Raw, unprocessed cow milk is boiled in a clay pot, where it is then turned into curd. In order to preserve the nutrients, the curd is also hand-churned from the cooked milk. Separating the butter from the ghee is the last stage.

    Shahji A2 Ghee is made from  Sahiwal Breed cow's milk. These cows are grass-fed and are not factory-farmed which gives pure desi ghee its special,natural qualities.


    Beta-casein makes up about 30 percent of the protein in cow’s a2 ghee. A2 protein is a healthier choice than A1. Proponents assert that A2 has several health benefitsand makes easier to digest.


    The traditional method of making desi ghee (bilona) is quite elaborate. Cow's milk is boiled & cooled. Then a spoonful of curd is added to this milk and kept at room temperature overnight. The curd is then churned to extract butter from it & then boil it to get Pure A2 desi Ghee.

Difference Between A2 & A1 Cow: A1 milk is obtained from cows of Western origin like Holstein, Friesian, Jersey etc. and yields large quantities of milk. A2 milk, on the other hand, is obtained from cows of Indian origin like Gir, Sahiwal etc.

They are simply genetic variants of one another that differ in structure by one amino acid.

We prepare the pure a2 ghee from A2 milk from our own Sahiwal breed cows. Sahiwal is a breed of Zebu cattle. It is also considered as the best milch cattle breed. It is capable of giving upto 20 litres of milk at a time. It has 5-6% essential fat in its milk which is further used to prepare pure desi ghee under the vedic method.

Which method do you use to make A2 ghee?

Simple question,but the process is not that much simple: Traditional Method of making a2 ghee is called Bilona. We make our All the Ghee with Bilona Method. The traditional method of making ghee starts with fresh milking of desi cows. The milk is boiled to remove bacteria and other impurities and cooled down to a warm temperature. Setting curds is done in earthen pots. Churning during the bilona process is done with a wooden instrument in an earthen pot.

A2 Ghee made in this way is pure bilona ghee. This is the traditional method of making ghee. It has all the properties as described in Vedas and Ayurvedic Shahtras. prepared by the bilona churning method, is costly than the desi ghee prepared with Commercial method where companies use machines and chemicals to prepare ghee.

In bilona churning method ghee making procedure we make ghee by hand churn method and 30 KG of Curd is used to make just 1 KG of desi ghee plus manual labour. Which makes A2 Ghee price a little more expensive than the other desi ghee available in the market.
