Shahji A2 Ghee is made from  Gir/Sahiwal Breed cow's milk. These cows are grass-fed and are not factory-farmed which gives Ghee its special, natural qualities.


Beta-casein makes up about 30 percent of the protein in cow’s ghee. A2 protein is a healthier choice than A1. Proponents assert that A2 has several health benefits

The traditional method of making ghee (bilona) is quite elaborate. Cow's milk is boiled & cooled. Then a spoonful of curd is added to this milk and kept at room temperature overnight. The curd is then churned to extract butter from it & then boil it to get Pure A2 Cow Desi Ghee.

1. Our A2 Cow Desi Ghee is made from Gir/Sahiwal Breed Cow.
It is a breed of ‘Zebu cattle’ and is considered to be one of the best milch cattle breeds in India.  
2. Sahiwal is one of the endangered species of cow which is very popular among the farmers. The reason for its popularity is that Sahiwal is comparatively more efficient in terms of milk production and birth to young ones.
Qualities of Gir/Sahiwal:
3. The cow has an ability to give 12-15 kg milk daily and 3000-4000 kg per year.
4. Only the Gir/Sahiwal breed contains allele A2 which contains proline instead of histidine protein found in milk of other breeds. Sahiwal’s milk acts as a boon to humanity which is helpful in curing several diseases like cholesterol, diabetes and heart problems.
Traditional Bilona Process
The traditional method of making ghee (bilona) is quite elaborate. Cow’s milk is boiled and cooled. Then a spoonful of curd is added to this milk and kept at room temperature overnight. The curd is then churned to extract butter from it. This butter is then boiled so that the water evaporates leaving behind pure ghee.
Significance of Vedic Method
The churning process is executed by using wooden churners (bilona). For the heating process, cow dung is the most beneficial fuel. Bilona is either hand-churned or churned via a motor. As a result, this ghee retains more vitamins and nutrients owing to its low-heat preparation.
Difference Between A2 & A1 Cow
A1 milk is obtained from cows of Western origin like Holstein, Friesian, Jersey etc. and yields large quantities of milk. A2 milk, on the other hand, is obtained from cows of Indian origin like Gir, Sahiwal etc.

Cows that produce both A1, A2 beta casein protein are called A1 cows and cows that only produce A2 beta casein are called A2 cows.

What is the A2 protein?

A2 is basically a protein that is present in the milk of our indigenous desi cows.The primary group of milk proteins are the caseins. A1 and A2 are the two primary types of beta-casein (beta-casein is one of the three major casein proteins) present in milk. They are simply genetic variants of one another that differ in structure by one amino acid.

Which breed are you using for making A2 cow ghee?

We prepare the pure desi ghee from A2 milk from our own Sahiwal breed cows. Sahiwal is a breed of Zebu cattle. It is also considered as the best milch cattle breed. It is capable of giving upto 20 litres of milk at a time. It has 5-6% essential fat in its milk which is further used to prepare pure desi ghee under the vedic method.

Which method do you use to make ghee?  

Simple question,but the process is not that much simple: Traditional Method of making ghee is called Bilona. We make our All the Ghee with Bilona Method. The traditional method of making ghee starts with fresh milking of desi cows. The milk is boiled to remove bacteria and other impurities and cooled down to a warm temperature. Setting curds is done in earthen pots. Churning during the bilona process is done with a wooden instrument in an earthen pot. Ghee made in this way is pure bilona ghee. This is the traditional method of making ghee. It has all the properties as described in Vedas and Ayurvedic Shahtras. prepared by the bilona churning method, is costly than the ghee prepared with Commercial method where companies use machines and chemicals to prepare ghee. In bilona churning method ghee making procedure we make ghee by hand churn method and 30 KG of Curd is used to make just 1 KG of ghee plus manual labour. Which makes Ghee price a little more expensive than the other ghee available in the market.

Does ghee need to be refrigerated?

Ghee is shelf stable and can be kept without refrigeration for 2 to 3 months. Store it in airtight glass jars.However, care should be taken to use clean dry spoons to dip into the jar during every use.

Can we get the ghee of the same colour for all the 12 months?  

No. If the ghee is made using the pure desi cow milk and the traditional process of making ghee, there will be variations in the colour and texture of ghee every time you buy it. This is because no essence, colour or standardization process is done to make the ghee look and taste the same every single time. This is 100% natural. You will never get ghee of the same colour and texture all 12 months if you are buying real and pure unadulterated ghee. The commercially available ghee which you find in the stores has fragrance, essence and preservatives added in it to make it look and taste the same throughout the year.

Does ghee make us fat?

Ofcourse Not! Ghee is one of the best healthy fats you can use. It’s a fat that doesn’t make you fat. It’s high in butyric acid for good digestion. It’s free of lactose and casein. It’s the perfect balance of Omega 3 to 6. It contains a special kind of fatty acid, CLA. Some studies have shown that CLA – conjugated linoleic acid, can reduce body fat and blood pressure! And it has one of the higher smoke point and a greater amount of healthy fatty acids.
