We make our A2 ghee by hand-churning it according to a 3000-year-old Vedic tradition known as the Bilona Method. Raw, unprocessed cow milk is boiled in a clay pot, where it is then turned into curd. In order to preserve the nutrients, the curd is also hand-churned from the cooked milk. Separating the butter from the ghee is the last stage.

Sahiwal Cow Breed: Our A2 Ghee is made from Sahiwal Breed Cow.It is a breed of ‘Zebu cattle’ and is considered to be one of the best milch cattle breeds in India. Sahiwal is one of the endangered species of cow which is very popular among the farmers. The reason for its popularity is that Sahiwal is comparatively more efficient in terms of milk production and birth to young ones.
Qualities of Sahiwal: The cow has an ability to give 12-15 kg milk daily and 3000-4000 kg per year.4. Only the Sahiwal breed contained allele A2 which contained proline instead of histidine protein found in milk of other breeds. Traditional Bilona Process: The traditional method of making a2 desi ghee (bilona) is quite elaborate. Cow’s milk is boiled and cooled. This butter is then boiled so that the water evaporates leaving behind pure a2 ghee.
