Bilona is the traditional method of making desi ghee. In this method, Cow’s milk is boiled and coole to a cetain temperature. Then a spoonful of curd is added to this milk and kept at room temperature overnight to make curd. The curd is then churned to extract butter from it. This butter is then boiled so that the water evaporates leaving behind desi ghee.

Setting curds is done in earthen pots. Churning during the bilona process is done with a wooden instrument in an earthen pot. A2 Gir Cow Ghee made in this way is pure bilona ghee. This is the traditional method of making ghee. It has all the properties as described in Vedas and Ayurvedic Shahtras. prepared by the bilona churning method, is costly than the desi ghee prepared with Commercial method where companies use machines and chemicals to prepare ghee.
