Ghee Rice Recipe Ingredients:
- (1 Cup= 240 Ml)
- 1 Cup Basmati Rice
- 2 Tbsp Pure Cow Ghee
- 1 Medium Onion Thinly Sliced (Optional)
- 2 Cups Water For Making In Normal Pot (1 ¾ Cup Water For Indian Cooker, 1 ¼ Cup Water For Instant Pot)
- 1 Green Chilly (Slit/Chopped)
- ½ Tsp Salt
- 14 Cashewnuts Or Kaju
- 14 Raisins
Whole Spices:
- 2 Inch Cinnamon Or Dalchini
- 4 Cloves Or Laung
- 3 To 4 Green Cardamoms Or Elaichi
- 1 Strand Mace Or Javitri
- 1 Star Anice Or Chakri Phool
- 1 Bay Leaf Or Tej Patta
Step 1: Wash one cup rice
Wash one cup rice until the water gets clear. This step is very important as this helps in removing extra starch from rice and cooked rice become fluffy and separate. Soak it for 20-30 minutes.
Step 2: Drain Water from Rice
After 20-30 minutes, drain the water and then set aside soaked rice.
Step 3: Slice Onion and Chilli
Meanwhile slice medium size onion thinly and slit or chop one green chilli.
Step 4: Keep 14 cashew nuts and 14 raisins ready in a plate.
Step 5: Heat Ghee
Heat 3 tbsp of ghee in a thick bottom pot or thick bottom pan. Keep the flame to a low, so that, you do not burn the ghee.
Step 6: Frying Nuts
- Once the ghee is melted and is hot, add cashew to the pot.
- Fry until you see light golden colour on few of the cashews but do not burn them.
- Now, add the raisins.
- Fry until the raisins puff up a bit in the ghee. Be sure to continuously stir as the cashew and raisin do not become too brown and bitter.
- Remove the fried cashews and raisins, taking out extra ghee from them, and keep them aside.
Step 7: Add Whole Spices
- Now to the same melted ghee, add all the whole spices and stir. Let them crackle for a few seconds and become fragrant, but do not burn the spices.
- Quickly add the sliced onions and stir.
- Continue to stir as you sauté the onion until they turn golden and caramelize.
- Now add green chilli and soaked rice to the pot.
Step 8 : Now Gently add rice
- Gently stir the rice for few minutes with the seasonings so that ghee coats the rice nicely. Do not over stir because it will break the rice grains.
Step 8: Add water in rice
- Add 2 cups of water or the required amount of water as per the cooking pot used- pressure cooker or instant pot. Here I’ve used normal pot, so added 2 cups of water. Add salt and taste the water, if needed add more. Ideally the water needs to be slightly salty. Also add ½ tsp of lemon juice (optional). Completely, cover the pot.
Step 9: Cooked the Rice
- Increase the temperature if needed to bring the water to a simmer and then reduce the heat to low heat. Let it simmer for 8-9 minutes until the rice is cooked and all water is absorbed. After 5-6 minutes, remove the lid and gently fluff the rice with a fork.
Step 10: Start Serving in Plate
- Transfer the ghee-rice to serving bowl or a plate. Garnish with cashews, raisins, and coriander leaves. Serve the ghee-rice with any gravy like veg kurma, curry, dals or even egg roast or you can eat it plain.
